Fresh Salmon Burgers

This three Ingredient recipe has been one of my personal favorite dinners for years. It's light, delicious and easy to make. Serve on a sourdough bun with lettuce, tomato, onion and spicy mayo. Add sweet potato fries and you have a complete meal!

Fresh Salmon Burgers

Ingredients:

  • 2 lbs ground salmon*
  • 2 eggs
  • 2/3 cup seasoned bread crumbs (I use Jason brand)

Instructions:

Mix all ingredients together. For best results refrigerate for an hour before forming burgers.
Preheat oven to 425
Form into patties about 3 1/2" in diameter and 3/4" to 1" thick
Bake on a parchment lined baking sheet for 15-18 minutes until just set. Burgers should be 145-150 degrees in the center. Do NOT overcook.

Best served fresh but can be refrigerated or even frozen tightly wrapped. Warm gently or serve at room temperature.

* I can usually get the fish department at Evergreen to grind the salmon for me. If not I cut salmon fillet into cubes and pulse in the food processor fitted with the "s" blade until chopped. Be careful when processing. You don't want pureed fish here!
